D'Arcy began her fascination with giving customers great food when at the age of 16 a relative opened a pie shop. Guess who was the cook and server?
From there she went on to work for a national hotel chain as only one of three female chefs in the company.
After some 16 years, Darcy went to back school and obtained her Certification as a Dietary Manager.
While working in hospitals and restaurants in the northwest in 1992 she obtained certification as a Certified Foodservice Professional.
Moving to Louisiana and working as a Chef at the Rip Van Winkle Gardens on Jefferson Island she went back to school again. In 2002 she graduated with a bachelor in dietetics.
After 11 years away from home she moved back to Idaho. Here in 2004 she achieved Registered Dietitian status as well as becoming a Serve Safe instructor.
In October of 2004 Darcy's catering and nutrition service was born.
